Chocolate, Peanut Butter, Banana, Rice Cake

Truth. I have a sweet tooth. I always have and probably always will. Frankly I'm ok with that. My new philosophy is there is pretty much a way to satisfy any craving while still keep it clean and my sweet tooth is no exception. You just gotta get a little creative and think outside the box! Well this recipe isn't all the creative but it's simple, easy, and one of my favorite quick desserts.

Here is the rundown of what you will need:

2 rice cakes
1 banana
2 tbs peanut flour, I use PB2 (you can substitute regular peanut butter but PB2 is much lower in calories)
1 tbs water
2 squares dark chocolate, Trader Joes Dark Chocolate Lovers Bar
A drizzle of honey (optional)
Zester or cheese grater

I ordered mine off Amazon because it is much cheaper online. I have seen it sold at some Whole Foods and Fred Meyer (in the healthy food section). There are also many other brands of peanut flour. I LOVE PB2. Thanks to my good friend Jana for turning me on to it!






This is some serious dark chocolate right here, and it amazing!  I got this bar from my foodie pen pal. Ok now to the recipe! I mean it's not really a recipe...more like a combination of fantastic flavors!

1. Mix you peanut flour with the water. If you like your peanut butter extra creamy try using unsweetened vanilla or regular almond milk. Either way is delicious and now you have peanut butter!

2. Spread your peanut butter on the rice cakes and top with sliced banana.

3. Then using my zester, I shaved the dark chocolate over my rice cakes. Then topped with just a drizzle of honey for some extra sweetness- see I told you I had a sweet tooth!

Rice cakes have endless ways you could dress them up and one of my favorite foods when I need a little crunch in my life.  Get creative!
