Well for now, I am stuck without a Chipotle. One of my favorite things is their cilantro rice. They even offer brown rice now, score! I made a Chipotle inspired quinoa that is a delicious and easy side dish.
Here is the recipe rundown:
1 cup quinoa
2 cups water
1/4 chopped cilantro
1 1/2 limes
1/2 tsp garlic powder
Salt & Pepper to taste
1. Put quinoa and water in a medium pot. I usually add a couple drops of olive oil to prevent it from sticking to the pot. Bring to a boil then cover and reduce heat to a simmer. Cook till water is absorbed and quinoa is fluffy. About 20-25 mins.
2. Squeeze lime juice into the cooked quinoa. Then add chopped cilantro and spices and mix.
I served it next to fiesta ground turkey stuffed pepper! Great combo.
