Clean Eating Guacamole

Truth- I used to strongly dislike avocados, but I have always liked guacamole. The one day it occurred to me that guacamole is really just mashed up avocados. So I gave avocados another shot and guess what? I love them! The key to avocados is eating them at their perfect ripeness. Open them a day or two too early to find hard flesh with little flavor. Open them too late and you'll find a browning avocado with an odd texture. But open them at the peak of perfection and you will find a creamy and rich avocado. I always have avocados on hand in my kitchen. I buy bags of 4 avocados at Trader Joes for $2.49 making them very affordable.

Here is the Guacamole rundown:

2 ripe avocados
1/2 lime
1/4 tsp garlic powder
1/4 tsp cumin
2 tbs clean salsa- read the ingredients you should be able to understand every ingredient and any added sugar should be near the end of the list
Salt & Pepper- to taste
Cayenne Powder (optional- for a little extra kick)

1. Cut avocados in half and then cube by cutting with knife vertically and horizontally. Scoop out with a spoon and add to bowl.

2. Squeeze lime juice into your avocado. Season with spices and mash with a fork.

3. Alternate between mixing and mashing until you reach desired consistency. I like my guac a little chunky. Mix in salsa.

Kitchen Queen tip: Put an avocado pit into your guacamole to prevent discoloration from oxidation.  

Simple and easy - Ole!! It can be a Mexican fiesta in your kitchen any day of the week.


  1. I love guac. For a bit cleaner flavor, I'd sub a clove or two of fresh garlic for the powder and a minced fresh jalapeno (don't rub your eyes) for the cayenne. And as an added optional treat some chopped cilantro to taste. Keep these great recipes coming!
