The Ultimate Reset- 21 Days to a new YOU!

Earlier this week I finished my 21 day Ultimate Reset. I wanted to share my experience to help you better understand how this program works.

Let's begin with some background info....

Before starting the Ultimate Reset I was stuck in a bit of a rut. It happens to all of us! I was doing T25 Beta phase but I was not giving it my all as I usually do. I missed workouts and my eating well it was slacking....it quickly started catching up to me. I gained 3lbs in a month (first time I have gained since January) and was experiencing uncomfortable bloating, probably from something I was eating.

Clean Guilt-Free "Fried" Chicken

I love fried chicken!! Frankly I don't know anyone who dislikes fried chicken....besides maybe vegetarians and vegans, they are missing out if you ask me ;). I can't tell you the last time I had fried chicken cause until now it really hasn't fit into my "clean eating" lifestyle. Then one night I was scrolling Instagram...haha let's be real, what's new?...and I stumbled @fitmencook's (go follow Kevin right NOW if you aren't already) fried chicken recipe! Guilt less fried chicken- you know I was all over that and I put my own spin on the recipe. Have you ever had chicken with corn flakes in the batter?? Well it's pretty much the best....so I figured why not use bran flakes instead?! And the result was a plate full of comfort without any of the guilt.

Protein Packed Shakeology Lara Bars- Vegan & Gluten Free!

Over the last few months I have become obsessed with Lara bars! They are really the only "clean" snack bar, made with only fruit and nuts. So of course I had to try my hand at making my own! Now these are even better than Lara bars because they are packed with protein and all the other amazing ingredients in Shakeology.....you could call these Lara bars on crack- for lack of a better term ;)

There are SO many variations of these bars that could be made. You can use your favorite kind of nuts and dried fruit. In italics is what I used for my bars. Play around with this recipe (which is really just for ratios) and please share what flavor combos you come up with in the comments below!

Vegan "Mac and Cheese"

No, I haven't gone vegan on you...at least not yet ;)

Funny story- growing up I used to HATE mac and cheese. What was wrong with me?! I was missing out for the first 10 years of my life that's for sure. Once I discovered that mac and cheese was amazingly good I was hooked, Annie's white cheddar shells being my favorite! However since I have been clean eating mac and cheese has been missing from my life. Until now I hadn't found a good substitute.

When I came across this recipe on Jill Hanner's site I knew I had to try it. Mac and cheese without the guilt?! I'm IN. I was skeptical about the nutritional yeast actually tasting like cheese but let me tell you it is sooo good. You can find Nutritional Yeast at Whole Foods or in the organic section of most grocery stores.

Gluten Free Crisp Cauliflower Crust Pizza

I've made cauliflower crust pizza a few times. It is always tasty but just not quite right which is why I haven't posted previous recipes. The crust usually ends up floppy and not very "crusty". I decided to do some research on how to get a crispy crust before making this pizza. The key to a crisp crust has been discovered, and I am here to share it with you. To be completely fair this crust is NOT as crispy as your traditional pizza dough, but hey folks it's made with cauliflower and makes a damn good pizza.

So...what's the secret behind this cauliflower crust? You have to drain out all the liquid!! Cauliflower naturally contains water and water makes for a soggy crust. Here is how it is done:

Vegan Chocolate Chip Oatmeal Cookie Pancakes

I stumbled upon this recipe on Pinterest and knew I had to make it right away! I pin a lot of recipe ideas but this one had to be made the next morning...as in today :)

These pancakes are like eating a oatmeal chocolate chip cookie for breakfast! I was in pancake heaven.

I decided to make these gluten-free by using Bob Mills all purpose gluten free flour. If you don't have it feel free to sub for another gluten free flour or whole wheat.

Clean Chocolate Chip Banana Bread

TRUTH - I buy two bunches of bananas just hoping that some of them will turn brown before we use them all up, giving me an excuse to make banana bread! My hopes and dreams came true (well sort of) and I had 3 brown bananas, just the way I like them.


And so naturally I made banana bread. I may be going out on a limb here but this is by far the BEST clean banana bread I have made to date. It is moist, fluffy and slightly sweet. I had trouble not eating the entire loaf straight out of the oven.

Get Fit For Summer- Just Do it Nike Giveaway

Can you believe it’s almost already March?! It seems like just yesterday we were ringing in the New Year.

2013 has been a great year for me so far. I have stuck to clean eating 80% of the time and have never felt better. The other 20% I watch what I eat but still treat myself on occasion. Balance is key otherwise I would go crazy and over indulge.

I also got my acceptance letter to Western Washington University. I will start attending the University in the spring and could not be more excited! I have been working to get into Western for quite some time, and now that it is a reality it feels surreal.

Maple Cinnamon Cashew Butter Recipe

If you follow me on Instagram (@kitchenqueeneats) you know I am OBSESSED with nut butter. Peanut butter, cashew butter, almond butter, sunflower seed butter all makes me one happy girl!! It is my guilty pleasure that I don't have to feel all that guilty about because all of these nuts are packed with healthy fats. Don't fear the fat people- your body needs it to function.

I discovered that nut butter was EASY peasy to make at home a couple months ago. All you need is nuts and a food processor and your good to go.

Baked Maple Rosemary Salmon

This salmon is super easy to make and one of my go-to weeknight meals!


Ingredients-

2 salmon filets
Rosemary- fresh or dried
Fresh cracked pepper
Garlic powder
Maple Syrup

1. Preheat oven to 300. Line baking sheet with foil.

2. Place salmon on baking sheet and sprinkle with rosemary, pepper, and garlic powder. Spread maple syrup over salmon with a spoon- I use about a tsp per filet.

3. Bake in the oven for 20-25 mins, until you see the white fats starting to release.

Serve next to your favorite vegetables and enjoy!!

Gluten Free Peach Streusel Muffins

Ever since I saw this recipe in Clean Eating Magazine I knew I wanted to make these muffins!! I love peaches and frankly wish they were in season year round. Since finding a good peach up here in Washington in the middle of winter is near impossible, I decided to thaw some frozen peaches and chop them up. This recipe just couldn't wait until peach season came back around. Use what you have- fresh is always best but frozen or canned will do. My only complaint about these muffins is they were not very sweet. I figured the natural sweetness from the peaches would be enough. Next time I plan to add more stevia or some honey, and I suggest you do too!

Chocolate Peanut Butter Shakeology Protein Pancakes

Chocolate and peanut butter may be one of my favorite flavor combinations...second to sweet and salty. I am sucker for anything sweet and salty. Maple syrup and bacon yumm, how about kettle corn...my guilty pleasure! So I pretty much never get tired of sweet/salty or chocolate/ peanut butter. These protein pancakes are moist, fluffy, decadent, and totally CLEAN. Dessert for breakfast? Yes please!

Clean Eating Quinoa Tabbouleh Salad

 
Recipe Rundown:

Kitchen tools- small pot, cutting board, chopping knife, measuring cups, mixing bowl.

Ingredients-

2 cups water
1 cup quinoa, rinsed
1 cup tomato, diced
1 cup cucumber, diced
1/2 cup parsley, chopped
1/4 cup mint, chopped
1/4 cup lemon juice
1 tablespoons extra-virgin olive oil
1/2 teaspoon cumin
1/2 teaspoon garlic powder
salt and pepper to taste

1. Bring the quinoa and water to a boil and then reduce to a simmer for 15-20 mins, until the water is absorbed. Let the quinoa cool.

2. Once quinoa is cool mix with the tomato, cucumber, parsley, and mint in a mixing bowl.

3. Then dress the salad with lemon juice, olive oil, and seasonings.

Simple, easy, clean, and delicious!

Clean Chocolate Peanut Butter Banana Oatmeal

Oatmeal is so easy to whip up and incredibly filling! Not only that but the flavor possibilities are endless. This oatmeal was inspired by my girl @laurenirene1 on Instagram. She is incredibly creative with her oatmeal and other clean eats, so be sure to follow her for inspiration. This breakfast totally satisfied my sweet tooth while keep it 100% clean eating! I'm not going to lie- I have been very skeptical about adding egg whites to my oats. Something about it just doesn't sound right to me BUT keeping an open mind when combining different foods is key. You CANNOT taste the egg whites and adding them gives your oats a protein boost.


I know this picture looks like a big bowl of crap! But it is SOOO delicious and nutritious.

Clean & Hearty Chicken, Veggie, Rice Soup

I had a great weekend visiting friends in Pullman, Washington. After traveling through airports I think I may be getting sick. I can feel by body trying to fight it off so I am still hopeful that with lots of liquids, vitamin C, and healthy food that I will be able to avoid it getting worse.

Clean Eating Vegetable Minestrone Soup

On a cold night with snow blanketing the ground, soup is the best. I am in Pullman visiting some friends and decided to make a hearty minestrone soup. I love soup, it is warm, comforting and totally satisfying. Making a big batch of soup is the best- you can use the left over for packed lunches, or even freeze portions for quick dinner fix. Feel free to add any vegetables that need to be used up in the fridge- the more the merrier!

Quinoa Chicken "Fried Rice"

Well first of all HAPPY NEW YEAR! I had a great New Year, celebrating with my boyfriends family and close friends at a club in Everett. Steve, my boyfriend's step-dad, was playing in Bullet Creek Band and rocked the house. The whole night was filled with lots of smiles and love, it was a blast! Hope you all had a nice New Year however you decided to spend it.

So new year, new goals. That's usually what happens about this time of year. My goals for 2013 is simply to be the best me I can be and learn to love myself unconditionally. It sounds cliche but life is too short to take anywhere but to the maximum. I want my body to be the best it can be but at the same time I want to accept myself as is, right now.

Now to the reason your here...Quinoa Chicken "Fried Rice" inspired by Chantal (or better known as @nutty4nutrition on Instagram). This dish may be one of the most delicious clean eats I've made to date. Kevin, my boyfriend, said that this version of my Fried Rice is better than regular (which includes brown rice and soy sauce). This recipe has NEITHER and is totally satisfying. Chantal- you rock my world!!
