Chocolate Peanut Butter Shakeology Protein Pancakes

Chocolate and peanut butter may be one of my favorite flavor combinations...second to sweet and salty. I am sucker for anything sweet and salty. Maple syrup and bacon yumm, how about kettle guilty pleasure! So I pretty much never get tired of sweet/salty or chocolate/ peanut butter. These protein pancakes are moist, fluffy, decadent, and totally CLEAN. Dessert for breakfast? Yes please!

Clean Eating Quinoa Tabbouleh Salad

Recipe Rundown:

Kitchen tools- small pot, cutting board, chopping knife, measuring cups, mixing bowl.


2 cups water
1 cup quinoa, rinsed
1 cup tomato, diced
1 cup cucumber, diced
1/2 cup parsley, chopped
1/4 cup mint, chopped
1/4 cup lemon juice
1 tablespoons extra-virgin olive oil
1/2 teaspoon cumin
1/2 teaspoon garlic powder
salt and pepper to taste

1. Bring the quinoa and water to a boil and then reduce to a simmer for 15-20 mins, until the water is absorbed. Let the quinoa cool.

2. Once quinoa is cool mix with the tomato, cucumber, parsley, and mint in a mixing bowl.

3. Then dress the salad with lemon juice, olive oil, and seasonings.

Clean Chocolate Peanut Butter Banana Oatmeal

Oatmeal is so easy to whip up and incredibly filling! Not only that but the flavor possibilities are endless. This oatmeal was inspired by my girl @laurenirene1 on Instagram. She is incredibly creative with her oatmeal and other clean eats, so be sure to follow her for inspiration. This breakfast totally satisfied my sweet tooth while keep it 100% clean eating! I'm not going to lie- I have been very skeptical about adding egg whites to my oats. Something about it just doesn't sound right to me BUT keeping an open mind when combining different foods is key. You CANNOT taste the egg whites and adding them gives your oats a protein boost.

I know this picture looks like a big bowl of crap! But it is SOOO delicious and nutritious.

Clean & Hearty Chicken, Veggie, Rice Soup

I had a great weekend visiting friends in Pullman, Washington. After traveling through airports I think I may be getting sick. I can feel by body trying to fight it off so I am still hopeful that with lots of liquids, vitamin C, and healthy food that I will be able to avoid it getting worse.

Clean Eating Vegetable Minestrone Soup

On a cold night with snow blanketing the ground, soup is the best. I am in Pullman visiting some friends and decided to make a hearty minestrone soup. I love soup, it is warm, comforting and totally satisfying. Making a big batch of soup is the best- you can use the left over for packed lunches, or even freeze portions for quick dinner fix. Feel free to add any vegetables that need to be used up in the fridge- the more the merrier!

Quinoa Chicken "Fried Rice"

Well first of all HAPPY NEW YEAR! I had a great New Year, celebrating with my boyfriends family and close friends at a club in Everett. Steve, my boyfriend's step-dad, was playing in Bullet Creek Band and rocked the house. The whole night was filled with lots of smiles and love, it was a blast! Hope you all had a nice New Year however you decided to spend it.

So new year, new goals. That's usually what happens about this time of year. My goals for 2013 is simply to be the best me I can be and learn to love myself unconditionally. It sounds cliche but life is too short to take anywhere but to the maximum. I want my body to be the best it can be but at the same time I want to accept myself as is, right now.

Now to the reason your here...Quinoa Chicken "Fried Rice" inspired by Chantal (or better known as @nutty4nutrition on Instagram). This dish may be one of the most delicious clean eats I've made to date. Kevin, my boyfriend, said that this version of my Fried Rice is better than regular (which includes brown rice and soy sauce). This recipe has NEITHER and is totally satisfying. Chantal- you rock my world!!
