Clean Eating Quinoa Tabbouleh Salad

Recipe Rundown:

Kitchen tools- small pot, cutting board, chopping knife, measuring cups, mixing bowl.


2 cups water
1 cup quinoa, rinsed
1 cup tomato, diced
1 cup cucumber, diced
1/2 cup parsley, chopped
1/4 cup mint, chopped
1/4 cup lemon juice
1 tablespoons extra-virgin olive oil
1/2 teaspoon cumin
1/2 teaspoon garlic powder
salt and pepper to taste

1. Bring the quinoa and water to a boil and then reduce to a simmer for 15-20 mins, until the water is absorbed. Let the quinoa cool.

2. Once quinoa is cool mix with the tomato, cucumber, parsley, and mint in a mixing bowl.

3. Then dress the salad with lemon juice, olive oil, and seasonings.

Simple, easy, clean, and delicious!
