Gluten-Free Cashew Curry Chicken Strips

I was craving chicken strips and fries. So I satisfied my craving and made clean chicken strips that are easy to prepare and packed with flavor! These are new favorite in my household. I served them next to sweet potato waffle fries from Costco and steamed broccoli- a delicious dinner!



Recipe Rundown:

Ingredients-
3 tbs Bob Mills gluten-free all purpose flour (can substitute another type of flour)
1/2 cup unsalted roasted cashews (crushed up in a Ziploc bag or food processor)
1/2 tsp corriander
1/4 tsp cumin
1/2 tsp curry powder
1/4 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
1 egg
2 chicken breasts cut into strips
2 tbs Coconut or olive oil


1. Preheat oven to 400 degrees F.  Combine flour, cashews and spices in a shallow bowl. Whisk egg in a small bowl.



2. Dip chicken in egg wash and then into cashew mixture.



3. Heat oil in a large frying pan. Brown strips on all sides and then transfer to baking sheet to finish cooking.

4. Bake for 10-12 minutes and serve!

  2. Ahh so excited you posted this!. I'll probably use tofu or tempeh instead of chicken but I'm such it will still be super yummy!
