Vegan Chocolate Chip Oatmeal Cookie Pancakes

I stumbled upon this recipe on Pinterest and knew I had to make it right away! I pin a lot of recipe ideas but this one had to be made the next morning...as in today :)

These pancakes are like eating a oatmeal chocolate chip cookie for breakfast! I was in pancake heaven.

I decided to make these gluten-free by using Bob Mills all purpose gluten free flour. If you don't have it feel free to sub for another gluten free flour or whole wheat.



Recipe Rundown:

Ingredients-
1 very ripe medium banana
1 teaspoon baking powder
1 flax egg (1 Tbsp flaxseed meal + 2.5 Tbsp water)
pinch salt
½ teaspoon vanilla extract
1 Tablespoon almond butter
1 Tablespoon coconut oil- melted
3 Tablespoons almond milk (or sub other milk)
½ cup gluten free oats
¼ cup Bob Mills gluten free AP flour
3 Tablespoons semisweet chocolate chips (non-dairy for vegan)

1. Mix the flax meal with water in a small bowl and let sit for 5 mins.

2. Mash banana with baking powder in medium mixing bowl.

3. Add the flax egg, salt, vanilla, almond butter, almond milk and oil to the banana and mix till well combined.

4. Sprinkle in the flour and oats. Then add the chocolate chips.

5. Spray pan with coconut oil cooking spray (can be found at Trader Joes). Use 1/4 scoop to make 5 pancakes. Enjoy!
