Clean Guilt-Free "Fried" Chicken

I love fried chicken!! Frankly I don't know anyone who dislikes fried chicken....besides maybe vegetarians and vegans, they are missing out if you ask me ;). I can't tell you the last time I had fried chicken cause until now it really hasn't fit into my "clean eating" lifestyle. Then one night I was scrolling Instagram...haha let's be real, what's new?...and I stumbled @fitmencook's (go follow Kevin right NOW if you aren't already) fried chicken recipe! Guilt less fried chicken- you know I was all over that and I put my own spin on the recipe. Have you ever had chicken with corn flakes in the batter?? Well it's pretty much the I figured why not use bran flakes instead?! And the result was a plate full of comfort without any of the guilt.

I present to you...

Clean "Fried Chicken:
Adapted from : Fit Men Cook

2 chicken breasts
3/4 cup bran flakes
2 tbs flax seed meal
2 eggs
Spices to taste (I use a lot)- garlic, cumin, paprika, mustard powder, pepper, pinch of sea salt
Coconut oil spray- I buy mine at Trader Joes

1. Preheat the oven to 375 degrees.
2. Crush your bran flakes- I used my hands, mix with the flax seed and spices in a shallow bowl.
3. Crack egg into another shallow bowl.
4. Cut your chicken breast into strips.
5. Spray your unlined baking pan with coconut oil- don't be shy.
6. Dip chicken in egg and then roll in the bran mixture. Place on baking pan.
7. Once all your chicken is coated spray the tops with coconut oil.
8. Bake for 20-25 mins and ENJOY!!
